Vinification and Maturing: after
de-stemming soft crushing the grapes they are fermented for 15 days at
controlled temperature. The malolactic fermentation happens in big oak casks
followed by a 1 month refinement in bottles.Alcohol: 13% Organoleptic

We use neutral barrels for all our Sangiovese lots so as not to
overpower the delicate fruit. We can’t say enough about the Stolpman vineyard
and we feel lucky to be able to source this great Sangiovese. During the
destemming we threw in a little Viogner and Syrah fruit, less the 3%, into the
fermenter for fun and maybe some added complexity. This wine was gently
destemmed then cold soaked for 4 days and fermented with gentle punchdowns.
Aged in neutral tight-grained French barrels for 19 months

underbrush and pomegranate. On the palate the wine is thin yet powerful, elegant,
balanced and well backed by the right tannins; the finish is dry and very long,
